INGREDIENTS
- 1 zucchini
- 1 red pepper
- 1 green pepper
- 1 eggplant
- 2 tomatoes
- 1/2 onion
- 2 garlic cloves
- 1 teaspoon salt
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon oregano
- 1/2 teaspoon pepper
- 2 tablespoons Garcia de la Cruz Organic Extra Virgin Olive Oil
DIRECTIONS
1. Preheat the oven to 350F
2. Cut the zucchini, red pepper, green pepper, eggplant and tomato into slices.
3. Chop the onion and garlic.
4. In an deep baking pan, pour a tablespoon of Garcia de la Cruz Organic Extra Virgin Olive Oil and put half of the onion you have chopped.
5. Add slices of the vegetables till the baking pan is full.
6. Sprinkle the salt, pepper, oregano, rosemary, thyme and a spoon of Garcia de la Cruz Organic Extra Virgin Olive Oil.
7. Bake for 45 minutes.
