Oven-Baked Salmon with Stuffed Olives

  • 2 large fillets (about 6 ounces each)
  • 1 cup García de la Cruz Manchego Cheese Stuffed Olives
  • 1 large lemon, sliced
  • 3 garlic cloves (minced)
  • 1 tablespoon fresh thyme
  • 2 tablespoons García de la Cruz Extra Virgin Olive Oil



  • Preheat your oven to 375°F (190°C).
  • Slice the lemon
  • Prepare the garlic
  • Place the lemon slices on the bottom of an baking dish
  • Place the salmon fillets on top of the lemons
  • Season the salmon fillets with salt and pepper.
  • Add garlic and olives 
  • Drizzle with Extra Virgin Olive Oil
  • Place the dish in the oven and cook for about 25 minutes or until the salmon is cooked through and flakes easily with a fork.
  • Serve hot, garnished with additional lemon slices if desired.
