Mashed Potatoes Soup

INGREDIENTS

Ingredients for 4 people

- 1 or 2 large potatoes (approx. 500 grs.); peeled and diced

- 3 tablespoons of Garcia de la Cruz Organic Extra Virgin Olive Oil + extra to drizzle in the final presentation

- 2 large leeks, finely chopped and sliced

- 3 small minced garlic cloves

- 700 ml of vegetable broth 

- 150 ml of milk / almond milk

- Salt and freshly ground black pepper

- Croutons

 

DIRECTIONS

1. Heat Garcia de la Cruz Organic Extra Virgin Olive Oil in a large and deep saucepan

2. Add the leeks, potatoes, garlic and a generous pinch of salt. Stirr with a wooden spoon. Cover the pan and let the vegetables simmer for about 15 minutes.

3. Next, add the vegetable broth and the milk. Simmer, cover and cook gently for another 25 minutes. Let it cool down.

4. Carefully pour into a blender and blend until smooth.

4. Place in bowls and add the croutons and a drizzle of Garcia de la Cruz Organic Extra Virgin Olive Oil on top. Enjoy!
